About the Recipe

A bowlful of summer flavor! Corn, pepper and zucchini shine in this super healthy dish. Protein and fat in the sausage for satiation, lots of colorful veggies packed with fiber, vitamins and antioxidants! Can be served alone as a meal or as a side to your main. Pair with a grain like wild rice to stretch it further. This meal reheats well from leftovers! We like it as a meal and get about 4 heaping bowls out of this amount. 2 bowls for dinner and 2 packed lunches the next day! Very flexible, you can switch to use veggies of your choosing depending on what you have/the season! Great on its own but we love to top with salsa too! This can also be cooked out on the grill too!

Ingredients

  • 1 pack of Sausage of your choosing (4 'link' size)

  • 4 ears of corn or 2 cans

  • 2 large bell peppers

  • 1-2 small zucchini or a portion of a large one

  • 1 onion (if desired)

Preparation

  1. Cut up sausage into 1/2 inch thick coins, cut corn off the cob, cut bell pepper and zucchini into 1/2 pieces

  2. Set aside a large serving bowl

  3. Heat a skillet to medium or medium/high. We want to fry everything one at a time to not overcrowd the pan.

  4. Fry the sausage till browned/cooked through and then place in the serving bowl

  5. Fry the bell peppers or zucchini next with a dash of salt and pepper, only putting enough veggie in at one time to cover the bottom of the pan. Fry all the veggies in batches this way till its all done and transferred to the bowl. Season with salt as you go, it doesn't need much.

  6. Toss the bowl with a serving spoon to mix up the ingredients.

  7. Serve as is in a heaping bowl or as a side to your main dish.

    1. We enjoy this topped with some fresh summer salsa and cilantro!!
