About the Recipe
A favorite way of mine to use up a extra fresh ripe peaches, makes for a tasty breakfast, snack or wrap it up and gift the loaf to a friend!

Ingredients
1 cup or 3 midsize peaches peeled and diced into 1/2 inch cubes
1/2 cup flavorless oil (I use Avocado Oil)
1/2 cup sugar
2 eggs
1/2 cup of plain yogurt or sour cream (this makes the bread moist)
1 tsp Vanilla Extract (Optional)
1/2 tsp Salt
1 tsp Baking Soda
1 1/2 cup Flour
Preparation
Preheat oven to 350!
Mix all wet ingredients besides the peaches until well mixed
Add in Flour and Mix just until it comes together
Mix in your Peach chunks, gently folding the batter
Bake at 350 for about 30-45 minutes until the top curst is brown and a toothpick comes out clean.
